Flourless Oatmeal Chocolate Chip Cookies

  • 1 cup of natural almond butter (I prefer MaraNatha or Sam's Choice)

  • 3/4 cup Coconut Sugar

  • 2 eggs

  • 1 teaspoon of vanilla extract

  • 3/4 cup rolled oats (I use half quick oats and half rolled oats)

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon baking powder

  • 1/2 cup chocolate chips (I use semi-sweet from Trader Joe's)

  • Sea Salt for Sprinkling post baking


  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper or spray with cooking spray.

  2. In a large mixing bowl, mix together the two eggs, vanilla and your coconut sugar.

  3. Add in the almond butter (I find heating it up in the microwave for about 20 seconds it is easier to work with.)

  4. In a seperate bowl, mix together the oats, baking soda, baking powder and salt.

  5. Add the dry ingredients to the wet ingredients and mix. If your dough seems to sticky, add in a little more oats at a time.

  6. Fold in the chocolate chips. Roll the mix into balls and flatten slightly onto your baking sheet.

  7. Bake for 10-12 minutes and sprinkle with sea salt after removing from oven.
