Healthy Chicken Enchiladas

Easy, convenient and a great freezer meal. Make these for your family and they won't even know they're healthy. Loaded with your favorite flavor of a popular mexican dish. These enchiladas are lower carb, way less fat than your regular enchilada and packed with amazing flavors.

Ingredients
-Extreme Wellness Tortialls (Low Carb)
-Reduced Fat Fiesta/Mexican Blend Cheese
-Canned Green Chilies
-Shredded Chicken
-Red Enchilada Sauce (19 oz can)
-Salt, Pepper, Garlic Powder
Directions
-Preheat your oven to 375 degrees
-Boil and shred chicken breast then toss with salt, pepper and garlic powder. Feel free to add enchilada packet seasoning to your chicken.
-Add in your can (or two) of green chilies. This will depend on how spicy you want your enchiladas.
-Grease a baking dish with cooking spray.
-Take a tortilla, add your chicken & chili mixture, top with fiesta blend cheese, roll up and place in your baking dish. Repeat this step until you have the amount of tortillas you'd like. I like to make 12-18 enchiladas at once.
-Pour your enchilada sauce on top of your tortillas. Sprinkle remaining fiesta cheese on top. Garnish with fresh parsley.
-Bake at 375 degrees for 20-25 mins.
-Serve hot and enjoy!
Tip: If you have any leftovers, store in the fridge and enjoy within 3-4 days.
