Just because you have decided to embark on a healthier lifestyle for maybe yourself and also your family, doesn’t mean you have to sacrifice southern, comfort food. This is guaranteed to be a meal that pleases the whole family!
-1 bag of frozen peas and carrots
-1 can of corn
-2 packs of ground beef, turkey or chicken (I really enjoy ground chicken)
-Salt, pepper, chopped onion, garlic powder, parsley
-1/2 cup of reduced fat cream cheese
-Reduced fat Mexican cheese blend
-Preheat oven to 375 degree
-Grease a baking dish.
-Brown your meat in a skillet. Season with ground pepper, salt, chopped onion and garlic powder.
-In a separate pot, add your drained can of corn, frozen peas and carrots. Cook on low-medium until nice and tender. -Add 1/2 cup cream cheese and softened vegetables to your ground meat. -Mix all together and add to your greased baking dish.
-Top your meat and vegetable mixture with cauliflower mash. You can use frozen mashed cauliflower or homemade.
-Top with reduced fat Mexican blend cheese.
-Bake for 20 mins. Enjoy!
